Before moving to Trophy Club, TX, Dan Hilbert worked in New York City for nearly 18 years. And without fail, Dan grabbed a coffee and bagel during my commute between Grand Central and Times Square. Man, he loved those bagels. Crispy on the outside and chewy on the inside. Don't get it twisted. Dan loves it here in Trophy Club -- but it became clear that he just couldn't get his hands (and taste buds) on the bagel that beckoned him from 42nd & Broadway.
So he boiled & baked his own, pulling from old-school techniques and simple ingredients. Then, over time and through great customer feedback in TX, his bagels became what he calls "East Coast born and TX raised." A unique combination that's resulted in premium classic & specialty bagels.
